Blueberry Lemon Clafoutis
  1. Preheat oven to 350 F.

  2. Melt butter in the microwave, then pour into a 10-inch baking dish or cast-iron skillet. Swirl the butter so it coats the bottom of the baking dish, then pour in the blueberries and arrange into an even layer. Set aside.

  3. In a large mixing bowl, whisk together the Organic Valley® Large Eggs, Organic Valley Grassmilk®, maple syrup, heavy cream, vanilla extract, salt, and lemon juice and zest until well combined.

  4. Add the all-purpose flour and whisk again until the batter is smooth and uniform.

  5. Pour the batter over the blueberries, then bake in the preheated oven for 45–50 minutes, or until golden brown around the edges.

  6. Allow the clafoutis to cool completely at room temperature before serving with a garnish of powdered sugar and/or lemon zest.
