Lemon Posset
  1. Start by mixing together your heavy cream and sugar in a medium sauce pan. heat this till a heavy simmer for 8 minutes, remove from heat and stir in lemon zest / juice.

  2. Transfer the liquid into your serving dishes or halved lemons. place in fridge for 30minutes - overnight.

  3. Add a small amount of sugar to the top of the lemon and using a blow torch toast the sugar. And enjoy!
