Thinly slice the celery into small, thin pieces. If your celery has beautiful leafy tops, use those too! They add so much freshness and flavor.
Finely chop the mint and add it to the celery.
Finely chop the entire head of garlic. You can absolutely use a manual chopper here. It saves time AND saves you from those garlicky fingers.
Add it to the bowl. Finely chop the chili pepper and add it to the bowl.
Wash and scrub the peel of your lemon and cut it in half. Thinly slice the ½ lemon into paper thin slices and then into half once more. Add the lemon slices to the bowl.
Add the pomegranate seeds, lemon juice, olive oil and salt. Toss everything really well, taste and add a little more salt if needed.
Serve fresh and enjoy one of the crunchiest, freshest, most ridiculously delicious salads.
TIP: This salad gets even better after sitting for a little while and letting all that lemon, garlic and olive oil mingle together.
