Spinach & Cheese Börek
  1. Line a baking tray with parchment paper and place the first sheet of puff pastry

  2. Wash and dry the spinach well

  3. Mix spinach with crumbled feta, shredded mozzarella, 1 whole egg and 1 egg white (save the yolk for brushing) until combined

  4. Spread the filling evenly over the pastry

  5. Cover with the second sheet of puff pastry

  6. Mix the egg yolk with 2 tbsp yogurt and brush the top

  7. Sprinkle with sesame seeds and cut into portions

  8. Bake at 180°C for 25–30 minutes until beautifully golden and crispy
