Line a baking tray with parchment paper and place the first sheet of puff pastry
Wash and dry the spinach well
Mix spinach with crumbled feta, shredded mozzarella, 1 whole egg and 1 egg white (save the yolk for brushing) until combined
Spread the filling evenly over the pastry
Cover with the second sheet of puff pastry
Mix the egg yolk with 2 tbsp yogurt and brush the top
Sprinkle with sesame seeds and cut into portions
Bake at 180°C for 25–30 minutes until beautifully golden and crispy
