Mix dry ingredients in a bowl.
Add butter and break with hands or a fork until your pieces are around the size of a small dice.
Add sour cream and water while gently mixing until a shaggy dough forms.
Dump onto a clean surface and knead by hand until your dough comes together.
Chill for 10-20 minutes.
Shape between 2 pieces of dusted parchment and freeze until ready to use.
In a 10in pan, melt 75g butter.
Add 100g of sugar and a splash of water or fruit juice.
Allow to cook down into a caramel very slowly.
Arrange your fruit and cover with your pie dough.
Ben your pie dough and then brush with an egg yolk before baking at 375 for about 15-20 minutes!
Remove from oven and allow to hang out for 10 minutes before flipping onto a plate!
