Blackberry-lime Tarte Tatin
  1. Mix dry ingredients in a bowl.

  2. Add butter and break with hands or a fork until your pieces are around the size of a small dice.

  3. Add sour cream and water while gently mixing until a shaggy dough forms.

  4. Dump onto a clean surface and knead by hand until your dough comes together.

  5. Chill for 10-20 minutes.

  6. Shape between 2 pieces of dusted parchment and freeze until ready to use.

  7. In a 10in pan, melt 75g butter.

  8. Add 100g of sugar and a splash of water or fruit juice.

  9. Allow to cook down into a caramel very slowly.

  10. Arrange your fruit and cover with your pie dough.

  11. Ben your pie dough and then brush with an egg yolk before baking at 375 for about 15-20 minutes!

  12. Remove from oven and allow to hang out for 10 minutes before flipping onto a plate!
