Combine potatoes, carrots, red bell pepper, squash, zucchini, red onion, and garlic,in a baking dish. Season generously with salt, black pepper, paprika, and cumin. Drizzle with avocado oil. Give it a good mix.
Bake in the oven on 425 degrees for an hour or (more) until the veggies are fork tender. Broil on hi for the last couple of minutes to give the veggies a nice char.
Top with the juice of 1 lemon, some freshly shredded parmesan cheese and fresh parsley for garnish. Enjoy!
