Once cooked, drain and rinse the noodles under cold water to halt the cooking process. Set them aside in a large bowl, ensuring they don’t stick together.
Brown Pork: In a large skillet, heat 1 tablespoon of peanut oil over medium-high heat. Add 1 lb of ground pork and ¼ cup of sliced green onions. Cook for about 5-6 minutes, stirring gently, until the pork is browned and fragrant. This will create a savory base for your Potsticker Noodle Bowl.
Make Sauce: While the pork is browning, whisk together the sauce in a bowl. Combine ½ cup of low-sodium chicken broth, 3 tablespoons of mirin, 2 tablespoons of dark soy sauce, 1 tablespoon of minced garlic, 2 teaspoons of grated ginger, 1 teaspoon of sesame oil, and ½ teaspoon of sriracha.
Combine Ingredients: Once the pork is browned, pour the prepared sauce over it in the skillet. Add the cooked lo mein noodles and 4 cups of coleslaw mix to the pan. Toss everything together for about 2-3 minutes.
Garnish and Serve: Remove from heat and transfer to shallow serving dishes. Garnish with the remaining 2 tablespoons of sliced green onions.
