Start by making your hibiscus tea. The easiest method is cold brewing it overnight in the fridge, but you can also steep it with hot water and pop it into the freezer for 30–40 minutes until chilled.
To a high-speed blender, add the lemon chunks, chilled hibiscus tea, frozen cherries, honey, olive oil and flaky sea salt.
Blend for about 1 minute. Just enough for everything to become fully incorporated and creamy. You don’t want to overblend here, otherwise the lemon pith can start to turn bitter.
Strain into a large ice-filled glass, add a few lemon wedges, and enjoy immediately.
Store the leftovers in a mason jar in the fridge - it will separate, but just shake it and pour over ice - you can drink within 5 days!
