Homemade Granola
  1. Preheat oven to 350 degrees Fahrenheit

  2. In a large bowl, combine 8 cups of oats, 2 teaspoons of salt, and 1 heaping teaspoon of cinnamon

  3. Pour in ¾ cup of olive oil and mix well

  4. Add ½ cup of maple syrup and ½ cup of honey, and stir until combined

  5. Add 2 capfuls of vanilla extract and mix thoroughly

  6. Optional: Add any desired mix-ins such as shredded coconut, nuts, seeds, pumpkin seeds, raisins, or mini chocolate chips

  7. Line a baking sheet with parchment paper and spread the granola mixture in an even layer

  8. Bake for 20 minutes, then stir with a spoon and re-level the mixture

  9. Bake for an additional 10 minutes until golden brown and crunchy

  10. Remove from oven and break into desired chunk sizes

  11. Store in an airtight jar
