Preheat oven to 350 degrees Fahrenheit
In a large bowl, combine 8 cups of oats, 2 teaspoons of salt, and 1 heaping teaspoon of cinnamon
Pour in ¾ cup of olive oil and mix well
Add ½ cup of maple syrup and ½ cup of honey, and stir until combined
Add 2 capfuls of vanilla extract and mix thoroughly
Optional: Add any desired mix-ins such as shredded coconut, nuts, seeds, pumpkin seeds, raisins, or mini chocolate chips
Line a baking sheet with parchment paper and spread the granola mixture in an even layer
Bake for 20 minutes, then stir with a spoon and re-level the mixture
Bake for an additional 10 minutes until golden brown and crunchy
Remove from oven and break into desired chunk sizes
Store in an airtight jar
