Add oil to a pan and cook sausage links until the outsides are fully browned. Slice into coins and set aside.
Cook pasta about a minute under the package instructions for al dente. Strain and set aside. Reserve a cup of pasta water and set aside.
In a heated pan, add oil then saute onions and peppers until the onions are caramelized.
Add butter, garlic and seasonings (salt, black pepper, garlic powder, onion powder, and Italian seasoning). Saute until the garlic is toasted and fragrant (about 1-2 minutes).
Add cooked pasta and grated parmesan. Mix well. If the pasta feels dry, drizzle in the reserved pasta water while continuing to mix to loosen the pasta.
Plate and top with additional grated parmesan and garnish with chopped parsley* (optional).
