In a heatproof bowl, melt the chopped chocolate and butter in the microwave or over a pan of simmering water.
In a separate bowl, whisk together the eggs, sugar, and vanilla extract.
Add the melted chocolate mixture to the egg mixture and whisk until well combined.
Gradually add the flour and mix until just combined.
Scoop the cookie dough onto a lined baking sheet, spacing them apart.
Bake for 10-12 minutes or until the edges are set and the centers are still slightly soft.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Meanwhile, prepare the coconut pecan caramel frosting by following the instructions on your favorite recipe or using a pre-made frosting.
Once the cookies have cooled, spread a generous amount of frosting on top of each cookie.
Drizzle melted chocolate over the frosted cookies for added decoration.
