Cook the mixture down until it reduces and all the vegetables are softened.
Once cooked, blend the mixture using an immersion blender or a regular blender until smooth.
Strain the blended mixture to remove the pulp, which can be saved for livestock feed.
To ensure safe hot water bath canning, add the canning salt and citric acid to the juice, adjusting as necessary to achieve a pH of 4.6 or below.
