Whisk together the soy sauce, honey, chicken broth, and garlic powder in a small bowl.
Place the chicken breasts into the slow cooker and pour the honey-garlic sauce over them.
Cover and cook on LOW for 5–6 hours or HIGH for 3 hours, until the chicken is tender.
Remove the chicken, shred with two forks, and add it back into the slow cooker. Stir to coat in the sauce.
Stir in the cooked egg noodles until fully coated in the honey garlic mixture.
Top with crunchy chow mein noodles right before serving for the perfect added texture.
