Creamy Vegan Green Bean And Potato Soup
  1. Heat olive oil in a pot and cook onion until soft.

  2. Stir in potatoes, green beans, paprika, thyme, salt, and pepper.

  3. Pour broth, bring to boil, then simmer 20 minutes.

  4. Blend part of soup and return to pot.

  5. Add coconut or cashew cream and stir.

  6. Season to taste, garnish with parsley.
