Cook Pork
Heat oil.
Fry pork until golden brown.
Drain on paper towels and salt.
Make Mushroom Sauce
Sauté mushrooms until colored.
Add shallot and garlic, cook 60 seconds.
Deglaze with wine or stock, scraping browned bits.
Add cream and simmer.
Add thyme, parsley, and pepper.
Cook Pasta
Cook fettuccine to al dente.
Transfer pasta to sauce.
Simmer sauce while pasta finishes.
