Press the tofu dry (or pat to dry) and shred with a grater. Toss with soy sauce, oil, cumin, paprika, and salt, then spread on a baking sheet. Bake at 350ºF for 30 mins, stirring occasionally.
Sauté the onion and garlic in some oil until softened. Add the cumin, paprika, chili powder, and tomato paste and continue cooking for 2-3 minutes.
Deglaze the pan with pineapple juice and soy sauce, and bring to a bubble before reducing heat to low. Stir in the baked tofu and serve in tortillas with your desired toppings.
