Lemon-dill Chicken Meatballs
  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

  2. Place ground chicken into a large bowl. Add cottage cheese, zucchini, panko, 2 tablespoons Parmesan cheese, 2 tablespoons fresh dill, lemon zest, salt, granulated garlic, and pepper. Gently mix all ingredients together, just until combined.

  3. Using a small cookie scoop, form mixture into 26 to 28 meatballs and place on baking sheet. Spray meatballs lightly with olive oil.

  4. Bake in the preheated oven for 18 to 20 minutes until an instant read thermometer inserted near the center reaches 165 degrees F (74 degrees C). Sprinkle with remaining Parmesan and dill before serving.
