Make the beef filling: In a bowl, combine the 2 lbs ground beef, 2 diced roma tomatoes, ½ diced white onion, ½ diced red bell pepper, ½ diced green bell pepper, 2 tbsp sofrito, 1 ½ tsp sazon, 1 ½ tsp adobo, 1 tsp black pepper, 1 tsp cumin, and 1 tsp oregano.
Assemble the maduro rellenos: Stuff the ripe plantains with the beef filling and top with mozzarella cheese.
Make the mayo ketchup: In a bowl, combine ½ cup mayo, ½ cup ketchup, 2 minced garlic cloves, and the juice of 1 lime. Season with salt to taste.
Garnish the maduro rellenos with cilantro and serve with the mayo ketchup.
