Preheat oven to 175 degrees celcius and line cake tins with baking paper.
Combine flour, sugar, cocoa powder, baking soda, baking powder, and salt in a bowl.
In a separate bowl, combine egg, buttermilk, coffee, oil, and vanilla and mix well.
Combine dry and wet ingredients together, taking care not to over mix.
Transfer to three cake tins and bake for 25-30 minutes or until a skewer comes out clean when you poke it into the cake. let layers cool.
To make chocolate ganache, melt dark chocolate and heavy cream together and stir until smooth. let cool until spreadable.
Assemble cake by filling with ganache—I like to have a messy exterior so no need to make it look perfectly smooth in my opinion!
