A delicious way to make a little corned beef go a ong way, reminiscent of ham salad. The raw cabbage adds a wonderful crunch, but no one will guess what it is
Chop corned beef as small as possible. Place in a mixing bowl
Chop or slice raw cabbage into fine pieces
Stir in the Swiss cheese
Blend the remaining ingredients together and tir into the corned beef mixture until everything is evenly distributed. 5. Spread thickly on rye or pumpernickel bread
Serve with pickles on the side.
Yield: 4 sandwiches
