Carrot Souffle
  1. Preheat oven to 350. Butter 2-quart round baking dish.

  2. Peel carrots and cut into cubes. Measure 7 cups. Cook carrot in boiling water 15 minutes, until tender. Drain and cool.

  3. Place cooked carrots in food processor; process until smooth. Add sugar, sour cream, flour, butter, baking powder, vanilla, salt; pulse to combine.

  4. Whisk eggs in large bowl. Whisk in carrot mixture.

  5. Spoon mixture into prepared baking dish. Bake at 350 for 40 minutes or until puffed and set. Sprinkle with powdered sugar.
