Preheat oven to 200°C (400°F).
Place potato wedges in a large baking dish.
In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, broth, oregano, paprika, salt, and pepper.
Pour mixture over potatoes, tossing to coat evenly.
Roast uncovered for 45–55 minutes, flipping halfway through.
Potatoes should be golden, tender, and slightly crisp at the edges.
Remove from oven and immediately sprinkle with crumbled feta.
Garnish with chopped parsley.
Serve with extra lemon wedges if desired.
