In a cast iron or all metal pan, melt your butter on medium heat.
Cut your shallots in half (in thirds or even quarters if they're large), then add them to the pan.
Cook them for about 5 minutes, turning them halfway through, then add salt and pepper and the honey and balsamic.
Sprinkle 1 tbsp of thyme leaves (or a tsp of dried thyme) over the shallots.
Mix or flip them until the seasonings are well incorporated then remove the pan from the heat.
Preheat the oven to 400 F.
Roll out your puff pastry, then cut it in a circle slightly larger than your pan and drape it over the top of the shallots before tucking down the sides.
Use a fork to poke a couple holes in the top, then bake it at 400 for 20-30 minutes or until the top is puffed and golden.
Once it's finished baking, carefully flip the tart onto a plate, then top with goat cheese and additional thyme, slice and enjoy!
