Slice up your vegetables into pieces
Heat a pan with a little oil then add in your curry paste and fry for a couple of minutes
Add in your vegetables and let that cook for a few minutes
Chop your chicken into small pieces
Add the coconut milk to the vegetables
Put another pan on a medium heat with a little oil and add your chicken to this pan
Let the vegetables cook until almost cooked and softened, and the sauce has reduced slightly
Add in your noodles and let them cook in the sauce until soft
Add the soy, lime and sugar to the chicken and cook until the chicken is fully cooked and the sauce has reduced and is sticky
Add the prawns to the noodles to let them heat through
When the noodles are soft and the coconut sauce has reduced, plate up the noodles
Top with the chicken then sprinkle over lots of fresh coriander and the spring onions
