Triple Chocolate And Strawberry Protein Cookies
  1. Preheat oven to 350°F.

  2. In a medium bowl, sift together protein powder, cocoa, oat flour, almond meal, baking soda and salt. Set aside.

  3. In a large bowl, whisk together melted butter, brown sugar, sugar and almond butter. Whisk in the eggs, one at a time, then vanilla. Add flour mixture and mix until fully incorporated.

  4. Fold in cacao nibs, white chocolate chips, and strawberries. Let dough sit to hydrate, covered with plastic wrap at room temp for 10 minutes.

  5. Scoop ¼ cup mounds, Space evenly on parchment lined sheet trays, and press tops of cookies down to form flattened discs and bake for 10 minutes. Rotate the pan and bake until set around the edges, about 3 minutes more.
