  1. Heat a frying pan over medium heat and cook bacon for 4 minutes on each side or until golden and crisp. Transfer to a paper towel-lined plate to drain. Break each rasher into 4 pieces.

  2. Cook chicken in same pan over medium heat for 8 minutes on each side or until browned and cooked through. Transfer to a chopping board. Stand for 5 minutes before thinly slicing.

  3. Meanwhile, place vinegar, mustard and oil in a screw-top jar, shake well and season.

  4. Arrange lettuce in a dish. Top with chicken, bacon, avocado, tomato and egg. Spoon over dressing and serve.
