Make-ahead Breakfast Burritos
  1. Preheat your oven to 200°C (180°C fan).

  2. Lightly grease an ovenproof dish with olive oil or cooking spray.

  3. Add feta and eggs: Place the feta in the centre of the dish and crack in the eggs. Season with salt and pepper, and if using, add chilli flakes, herbs, or hot honey.

  4. Bake for 12–15 minutes, or until the eggs are just set. Once baked, mash everything together with a fork.

  5. Meanwhile, sauté the veg: In a frying pan, heat a little oil. Add the tomatoes, bell pepper, spinach, spring onion (if using), and black beans. Season with cumin, paprika, salt and pepper. Cook for 5–8 minutes until softened.

  6. Assemble: Spoon the mashed egg and feta mixture onto each wrap, top with the sautéed veg and spring onion, then roll up tightly.

  7. Store: Keep in the fridge for up to 3 days or freeze individually. Reheat in the microwave or oven when needed.
