Microwave Steamed Jam Sponge Pudding
  1. Grease a microwaveable bowl. 1.5pints/750ml or next size up. Add the jam to the bottom and level it with the back of a spoon. Set aside.

  2. Beat the butter and sugar for the sponge together til light and fluffy in a mixing bowl, add the vanilla extract, then beat in the eggs, one at a time. Add the flour and fold through, then fold in the milk.
