Chop the vegetables
Sauté the onion in a drizzle of olive oil
Once the onion starts to brown, add the tomatoes
Season with salt, pepper, cumin, coriander, paprika, tomato puree and any preferred spices
Keep cooking the tomatoes on medium low until dissolved
Switch off the heat and crack the eggs into the mixture
Mix thoroughly and add a splash of water
Turn the heat back on low and spread the cheese on top
Cover and let it cook for 3-5 minutes
Garnish and serve with bread
