Garlic Sesame Soba Noodles
  1. Cook soba noodles according to package instructions.

  2. In a standard-size bowl, whisk together the garlic, ginger, sesame oil, soy sauce, and chili paste.

  3. In a large pot or saucepan, add yu choy (or vegetable of choice) to wilt slightly.

  4. Then add cooked noodles to this pan along with sauce and green onions.

  5. Cook about 1 minute, mixing together all elements.

  6. Top with sesame seeds.
