Cook soba noodles according to package instructions.
In a standard-size bowl, whisk together the garlic, ginger, sesame oil, soy sauce, and chili paste.
In a large pot or saucepan, add yu choy (or vegetable of choice) to wilt slightly.
Then add cooked noodles to this pan along with sauce and green onions.
Cook about 1 minute, mixing together all elements.
Top with sesame seeds.
