Combine egg whites, water, and vanilla extract
Mix in granulated sugar, light brown sugar, ground cinnamon, nutmeg, and kosher salt
Combine pecan halves, cashews, and almonds with the sugar mixture
Spread nut mixture evenly on a baking sheet
Bake at 300°F for 15 minutes
Toss the nuts
Bake for another 15 minutes
Let cool in the pan before breaking apart
