Pickled carrots:

Sandwiches:
Combine all of the pickled carrot ingredients in a jar, cover and shake to combine. Store in the fridge for at least 30 minutes while you prepare the remaining ingredients.
Combine all of the meatball ingredients in a large bowl and form into 12 balls. Heat oil in a skillet over medium-high heat, add the meatballs and brown on all sides until cooked through, about 10 minutes.
Make the sriracha mayo by mixing all ingredients together in a bowl or jar.
Slice open the bread and spread mayo on both sides. Fill the sandwiches with three meatballs, pickled carrots and sliced cucumber. Garnish with cilantro, scallions and jalapenos.
