  1. Combine all of the pickled carrot ingredients in a jar, cover and shake to combine. Store in the fridge for at least 30 minutes while you prepare the remaining ingredients.

  2. Combine all of the meatball ingredients in a large bowl and form into 12 balls. Heat oil in a skillet over medium-high heat, add the meatballs and brown on all sides until cooked through, about 10 minutes.

  3. Make the sriracha mayo by mixing all ingredients together in a bowl or jar.

  4. Slice open the bread and spread mayo on both sides. Fill the sandwiches with three meatballs, pickled carrots and sliced cucumber. Garnish with cilantro, scallions and jalapenos.
