Vegan Peanut Butter Cookies
  1. Heat oven to 350°F (175°C). Line a baking sheet with parchment or silicone mat.

  2. Combine peanut butter and sugar until creamy. Stir in almond milk and vanilla.

  3. Mix in flour, baking soda, and salt until dough forms.

  4. Scoop 1.5 tbsp dough, roll into balls, place 2 ½ inches apart. Flatten with fork crisscross.

  5. Bake 10–13 minutes until golden. Softer at 10 minutes, crisper at 13.

  6. Rest a few minutes, then transfer to rack.
