Butter an 8x8 inch pan and preheat the oven to 350°F.
Mix the rice flour, salt, baking powder, and sugar together in a bowl.
In a separate bowl, mix the eggs, horchata, melted butter, vanilla extract, and cinnamon until smooth.
Combine the wet and dry ingredients and mix until just combined (it's okay if it's a little lumpy).
Pour the batter into the prepared pan.
Bake for about 1 hour.
Let cool completely before removing and serving for the best texture.
Optionally, top with powdered sugar and more cinnamon.
