Slice each date lengthwise (don't cut all the way through) and remove the pits.
Fill each date with about ½ teaspoon of peanut butter.
Place a pecan half into the peanut butter filling, gently pressing it in.
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring each time, until the chocolate is fully melted and smooth.
Using a fork or skewer, dip each stuffed date into the melted chocolate, ensuring it's fully coated. Allow excess chocolate to drip off.
Place the dipped dates on a baking sheet lined with parchment paper.
Sprinkle with a pinch of sea salt flakes, if desired.
Refrigerate the dates for 20-30 minutes, or until the chocolate hardens.
Store the treats in an airtight container in the fridge for up to a week.
