Thai Basil Cucumber Salad
  1. In a large bowl, whisk together the rice vinegar, sugar, sesame oil, and a good pinch of salt. Toss in the cucumber and Thai basil leaves. Season for salt.

  2. Chill for about one hour.

  3. Transfer to a serving bowl and top with the peanuts.
