Romesco Sauce
  1. Blacken and blister the red peppers and red chillies until very soft, then remove seeds

  2. Bake the large slice of stale bread with olive oil and salt until golden

  3. Lightly toast the hazelnuts

  4. Blitz all ingredients together (peppers, chillies, garlic, bread, hazelnuts, red wine vinegar, olive oil, oregano, salt and pepper) until you have a smooth thick sauce

  5. Check the seasoning and add more vinegar, salt, and pepper as necessary

  6. Serve with roasted new potatoes, grilled spring onions, and chopped parsley
