In a blender, combine basil, mayonnaise, cottage cheese, shallot, buttermilk, lemon juice, salt, and pepper. Blend until smooth and creamy. Refrigerate until ready to use.
In a large bowl, layer the arugula, quinoa or couscous, cherry tomatoes, corn, chicken, Craisins, and pumpkin seeds.
Drizzle the dressing over the salad and gently toss until evenly coated. Start with half the dressing and add more to taste. Sprinkle the cheese on top.
