Heat your oven to 400°, get out a 9 x 13 baking dish and spray with some non stick spray or oil or butter.
Place the frozen dumplings in the baking dish.
In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, brown sugar, curry paste and all the spices along with the evaporated milk or coconut milk. Whisk until well combined and smooth.
Spread the handfuls of spinach over the dumplings. Remember that spinach shrinks to nothing so be generous with the spinach.
Pour the mixture from the bowl over the dumplings and spinach.
Cover tightly with foil and bake 20 to 25 minutes. I like to take the foil off and bake uncovered for 5 to 7 minutes so the dumplings have a little crispness to the tops. Reminder that all ovens are different so keep an eye on the cook time when making this for the first time. Sauce will be bubbly and caramelized when this is done.
Serve with rice if you like. Top with any of the garnish suggestions like chives, green onions, chili crisp, sesame seeds or cilantro.
