Roasted Cauliflower & Chickpea Salad
  1. Preheat the oven to 180C & line a large baking sheet with parchment paper.

  2. Add cauliflower, chickpeas ' onion & toss with oil & spices.

  3. Roast for 30 minutes, turning halfway through.

  4. Place into a large serving bowl with remaining ingredients.

  5. Whisk dressing ingredients together until smooth & pour over salad, toss to combine and enjoy.
