Season the chuck roast with salt and pepper.
Heat oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to the slow cooker.
Pour the French Onion soup and Worcestershire sauce on top of the roast.
Top with the sliced onions, garlic and seasonings.
Cover and cook on low for 8-10 hours, until the meat is tender and easily shreds.
Shred the meat in the slow cooker and mix with the onion gravy.
