One-Pot Beef and Garlic Parmesan Spinach Pasta

Ingredients:

1 pound ground beef

1 tbsp olive oil

2 cloves garlic, minced

1 medium yellow onion, chopped

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

4 cups beef broth

1 (14.5 ounce) can diced tomatoes, undrained

1 pound pasta (penne, rotini, or your favorite shape)

5 ounces fresh spinach, roughly chopped

½ cup heavy cream

½ cup grated Parmesan cheese, plus more for serving

    Directions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess grease.

  2. Add the olive oil, minced garlic, and chopped onion to the pot. Cook until the onion is softened and translucent, about 3-4 minutes.

  3. Stir in the Italian seasoning, salt, and pepper.

  4. Pour in the beef broth and diced tomatoes. Bring to a boil.

  5. Add the pasta to the pot. Make sure the pasta is submerged in the liquid. Reduce heat to medium, cover, and simmer for 12-15 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.

  6. Stir in the fresh spinach until it wilts, about 1-2 minutes.

  7. Stir in the heavy cream and Parmesan cheese until the sauce is creamy and smooth.

  8. Serve immediately, garnished with extra Parmesan cheese.
