Avocado Salsa Shrimp Salad
  1. Pat your shrimp dry with a paper towel and cut them into bite-size pieces.

  2. Add the shrimp to a large bowl.

  3. Add cucumber, jalapeno, tomatoes, red onion, and cilantro to the bowl with the shrimp.

  4. Pour salsa and lime juice over the top and mix until the salad is completely coated.

  5. Season the salad with salt and pepper to taste and mix again.

  6. Taste and adjust seasonings and lime juice accordingly.

  7. Sprinkle avocado over the top right before serving.

  8. Serve immediately with tortilla chips or let the salad chill in the fridge for 30 minutes - 1 hour before serving.
