Preheat oven to 350 degrees. Pre-bake the pie crust, lined with foil and spread with dried beans, for 25 minutes if frozen, or 15-20 minutes if thawed.
Brown the onion to soften and add garlic
Lay sliced tomatoes on a cutting board with paper towel. Sprinkle with salt, cover with more paper towel, and dry for 15-30 minutes.
Combine the mayonnaise and the two cheeses in a bowl and set aside
Layer your tomato and Vidalia onion slices in the pie crust, alternating layers
Sprinkle the mix with pepper and drizzle olive oil over the vegetables
Sprinkle on the chopped basil and then spread cheese/mayo mix on top
Add extra basil on top
Bake pie for 40-45 minutes or until golden brown
