Wash the rice first
Add 3 tbsp dry rice (50g), ¼ cup chicken stock, ½ tsp garlic, 10g light mayo, 15g greek yogurt, 1 - 2 tbsp sweet chilli, Srircacha to taste to each bowl
Add 125g diced & seasoned chicken breast - seasoned with paprika, chilli powder, salt, pepper, lemon juice and sweet chilli sauce
Add veggies of choice: red onion, yellow capsicum and brocolli
Bake at 180c for 40 minutes
Serve with extra bang bang sauce, green onion and avocado
For the bang bang sauce, mix 20g yogurt, 10g light mayo, 1 tbsp sweet chilli sauce, sriracha to taste, and a dash of water to thin
