Preheat oven to 375°F.
In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix well.
Scoop the beef mixture and shape into small patties, about 1-inch in diameter.
Place the patties on a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until cooked through.
Top each patty with a small slice of cheese.
Place the bun or roll pieces on the baking sheet around the patties.
Bake for an additional 5 minutes, or until the buns are lightly toasted.
Serve the burger bites warm.
