The Classic Chocolate Chip Cookie
  1. Mix sugars with cold cubed butter until just smooth, do not cream

  2. Add egg yolks, whole egg, and vanilla paste and mexican vanilla, mix until combined

  3. Combine all dry ingredients (flour, baking powder, salt, baking soda, cornstarch)

  4. Add dry ingredients to wet mixture, mixing until just barely combined

  5. Add milk chocolate chips and semi sweet mini chips

  6. Portion dough into 6oz balls (makes 8 cookies)

  7. Freeze overnight

  8. Bake at 350F for 16-20 minutes until golden brown on the outside

  9. Let rest for 20-30 minutes before eating
