Thinly slice the cauliflower, potato, and onion
In a bowl add the gram flour and the spices and mix. Add water slowly until you get a runny paste.
Add all the vegetables and mix well with your hands adding a bit more water if needed
Heat the oil in a deep pan/wok and drop in a tiny amount of mixture - if it sizzles and comes to the top the oil is ready.
With your hand, drop in small amounts of the mixture and cook until golden brown.
Use a slotted spoon to take the pakoras out and put them on a kitchen towel. Repeat until you've used all the mixture.
Enjoy with some tamarind and a hot cup of chai!
