Apple Compote
  1. Peel, core and chop apple into larger chunks

  2. Put the apples in a saucepan with the lemon zest and water, butter and sugar.

  3. Cover with cartouche and cook over a low heat until they are soft and mushy.

  4. Cool and serve.
