Bruschetta Tomatoes
  1. If infusing olive oil, start it at least an hour before. Simmer garlic cloves in oil until golden, cool, and infuse with herbs.

  2. Dice tomatoes, remove seeds and excess juice.

  3. Place tomatoes in a sieve over a bowl, sprinkle with salt, and drain 10–60 minutes.

  4. Transfer tomatoes to a bowl, toss with infused or plain olive oil, garlic, and herbs.

  5. Let marinate for up to 1 hour at room temperature or chill.

  6. Add fresh basil before serving. Spoon over toasted bread and enjoy.
